Country Fruit Cake


8oz self-raising flour

1tsp mixed spice

3oz butter

4oz soft brown sugar

8oz raisins

4 oz chopped nuts

1 large egg

ΒΌ pint milk

Pecan or walnut halves


Cooking Time: 60 minutes

Oven gas mark 5 (190o C/ 375oF

Preheat oven

Line and oil a cake tin

Mix flour, spice and butter to resemble breadcrumbs

Mix in other dry ingredients

Mix in egg and milk

Spoon into cake tins

Decorate with sugar and pecans

Bake 60 minutes
