Flaxseed Bread

Generally speaking, I don't miss bread at all on a low-carb diet, but this very low carb focaccia-style bread tastes fantastic and won't give you bloat. Tastes great, but I can't see it being any good as a sandwich.

Ingredients:

2 cups flax seed meal

1 Tablespoon baking powder

1 teaspoon salt

1-2 Tablespoons sweetening power from artificial sweetener

5 well–beaten eggs

1/2 cup water

1/3 cup oil

Preparation:

Preheat oven to gas 4/electric 180C/350 F. Prepare pan (a 10”x15” pan with sides works best) with oiled parchment paper or a silicone mat.

1 Combine dry ingredients.

2 Add wet ingredients and combine well.

3 Stand batter for 2 to 3 minutes to thicken.

4 Pour batter into pan and spread it away from the centre into a rough rectangle an inch or two from the sides of the pan.

5 Bake for about 20 minutes, until it springs back when you touch the top.

6 Cool, cut, scoff.
