Norwegian Apple Cake


2 large eggs

9oz caster sugar

4oz butter

¼ pint of full milk

6½ oz plain flour

3 teaspoons baking power

3-4 apples (I like Braeburn)


Oven: 200C/400F/gas mark 6

Grease and flour 8"x12" tin

Whisk eggs and 8oz of the sugar until the mixture is thick and creamy and the whisk leaves a trail when it is lifted out.

Put the butter and milk into a pan and bring to the boil.

Stir immediately into the eggs and sugar

sieve the flour and baking powder into the batter and fold carefully so that there are no lumps of flour

Pour the mixture into the tin

Peel, core and slice the apples and arrange over the bater

sprinkle with the remaining sugar

Bake for 20-25 minutes until well risen and golden brown.

Great on its own or with cream or custard.
