Pesto Salmon

One of my favourite recipes, especially as it is low-carb.

Ingredients:

Salmon fillets

Pesto sauce

Freshly ground nuts (not peanut. I use mixed nuts)

Freshly ground parmesan cheese

Method:

Pre-heat oven to 375F, Gas mark 5, 190C

Lightly oil cooking foil

Place salmon fillet on cooking foil

Top the salmon with a layer of pesto

Mix together nuts and cheese and add a goodly layer on top of the pesto

Cook for twelve minutes uncovered.
